I have a 2012 mazda 3 i Sport sedan with 16'' stocks wheels 205/55/16 toyo tires.

Ill be going for the EKM3 17x7 wheel with a +45 offset.

The tires that I've chosen are the Continental extreme contact DWS 06 225/45/R17

I recently purchased these tires completely forgetting that I use to run my 17x7 wheels with the hankooks 215/45/17.

I just want to know if these tires would work or would I lose performance, handling, Mpg, etc compared to the 215/45/17. Pros and cons if applicable.

225s might be a bit wide for a 7" rim, and combined with the soft sidewalls of the DWS06 the steering will be a bit sluggish. As you approach the limit, those tires will roll badly onto the sidewall.
Which Hankooks?

they were the hankook ventus s1 noble2

If you are looking for a performance oriented tire neither one really fits the bill. Between the 2 however, the DWS06 would be the choice. There are better tires out there though, such as the Michelin Pilot Sports A/S, Dunlop Signature HP, BF Goodrich G Force Comp-2 A/S etc.
For a 17x7" rim on a Mazda 3 the optimum size is 205/50-17.
