Earlier this week, my vehicle's i-Eloop system developed a fault and stopped working. I brought it in to the Mazda service centre and they found error code P01794, essentially a problem in the charging logic of the PCM for the capcitor.

There is a Service bulletin out so they reprogrammed it with updated software for the PCM.

Now when I look at the Consumption status display, it does reflect the change in the regeneration status (charging versus non-charging), but when charging, the 5 bars no longer go up/down with the charge status of the capacitor while driving or coasting. It stays at the lowest bar.

Worth asking the dealer about this?

I would have to yes, sometimes I like to drive with the i-Eloop screen on and it would annoy me not to see the bars going up/down reflecting the charge status.
