So I had my window tint guy come and install my tints and he did a good job but he was going a little crazy with his spray bottle and it got into the fabric of the door leaving water stains. How do I get it back to black?

Tuff Stuff is my go-to for all interior cleaning needs - it cleans the hell out of everything. Use it with a microfiber cloth and lots of water, hopefully you can dilute that crap out of your fabric. Best of luck!

You take it back to the tinter and have them fix their mistake. This is unacceptable for a professional who takes pride in their work.

Otherwise if you don't want to go through the trouble you can get a wet/dry vac and dilute the soap that your tinter got all over your door cloth with a spray bottle full of distilled water, then vacuum it out, use compressed air, and allow to air dry in the sun. Repeat as necessary.
